Pulled Pork Sandwiches

Serves: 8

Ingredients:

• 2 Tablespoons paprika
• 1 Tablespoon packed brown sugar
• 1 Tablespoon chili powder
• 1 Tablespoon ground cumin
• 1 Tablespoon sugar
• 1-1/2 teaspoons coarsely ground black pepper
• 2 teaspoons salt
• 1 teaspoon ground red pepper
• 1 boneless pork shoulder roast (Boston butt), 4 to 5 pounds

Instructions:

  1. Preheat oven to 300 degree oven. 
  2. To make the spice rub, combine paprika, brown sugar, chili powder, cumin, sugar, black pepper, salt, and red pepper in a bowl.
  3. Rub spice mixture over pork roast, pressing into surface.
  4. Place pork roast in a shallow baking pan with 1/4 cup of water. Cover the pan tightly with foil and slow roast in oven 2-3 hours, until pork begins to pull apart easily. 
  5. Unwrap pork butt and continue baking until browned. Break the pork into pieces with a fork. Serve with your favorite barbeque sauce.

Cook's notes: The rubbed pork can also be cooked over indirect heat in a covered grill on low heat. In this case, a few water-soaked wood chips improve the flavor. Be careful that the pork does not brown too much. If this happens, simply wrap the pork in aluminum foil.
