Recipe for Maple Leftover Corn Salad:
Prep Time: 20 minutes
Cooking time: 0 minutes (plus one hour for marinating)
3 cups cooked corn kernels (approximately 4 ears)
¾ cup canned black beans (rinsed and drained)
1/3 cup finely diced red onion
1/3 cup diced roasted red peppers
¼ cup roughly chopped cilantro
¼ cup apple cider vinegar
3 Tablespoons extra virgin olive oil
1 teaspoon kosher salt
½ teaspoon ground black pepper
12 oz. diced leftover cooked protein (meat, shrimp, poultry, etc)
1. Mix all the ingredients together in a large bowl.
2. Cover and place in the refrigerator for at least 1 hour before serving. Taste and adjust seasonings.
3. This relish will last for 2 days in the refrigerator in an airtight container.
