
Recipe for Pumpkin Pancakes:

Ingredients:
1 ¼ cups buttermilk
¾ cup canned pure pumpkin
4 large eggs plus 1 egg yolk
3 Tablespoons dark brown sugar
½ teaspoon pure vanilla extract
½ stick unsalted butter, melted
1 ½ cups all purpose flour
1 teaspoon cinnamon
Pinch of nutmeg
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
Unsalted butter for cooking pancakes
1/3 cup of chopped pecans
1/3 cup finely chopped dried apples
maple syrup
Instructions:
Transfer onto plates, sprinkle chopped pecans and dried apples on top. Serve with warm.
