Onion Marmalade

Recipe for Onion Marmalade:

Difficulty: Easy
Prep time: 15 minutes
Cook time: 40 minutes
Serves: 1 cup

Ingredients:

4 cups very thinly sliced sweet onions (about 3 onions)
2 Tablespoons extra virgin olive oil
½ teaspoon salt
2 pinches dried thyme leaf
1 cup pomegranate juice
1 teaspoon honey

Instructions:

1. In a medium sauté pan, combine onions, oil, salt, and thyme. 

2. Place over medium-low heat and cook covered for 20—30 minutes or until the onions are very soft.  It is necessary to stir them periodically so that they don't burn.

3. Add pomegranate juice and honey.  Increase heat to medium and cook uncovered, stirring periodically until the pomegranate juice has reduced to the consistency of jam. Remove from heat and let cool.  This can be made several days ahead of time and stored in the refrigerator.

Note: There are many uses for onion marmalade.  For instance, serve on toast points or on bruschetta either alone or with other ingredients like goat cheese, blue cheese, honey, or smoked meats.  It is also great mixed with pasta along with walnuts, parmesan cheese, and sautéed mushrooms.
