Recipe for Crepes:

Cooking time: 15 minutesServes: 20 6-inch Crepes
¾ cup all purpose flour
¼ teaspoon salt
2 Tablespoons sugar
1 cup milk
3 Tablespoons melted butter
- Whisk eggs until frothy. Add flours and salt. Whisk just until smooth as over-mixing will cause the crepes to be tough.
- Add milk and mix. Add butter and mix.
- Heat a non-stick sauté pan over high heat until hot. Spray with pan spray or lightly coat with additional butter. Coat the pan with a small amount of batter by turning the pan so that the entire bottom of the pan is coated with a thin layer of dough. When it is cooked on one side, flip and cook briefly until the other side is cooked.
- Remove from pan and serve hot with your favorite topping (I love real maple syrup!).
